You can currently stream all events for your game to your own S3 bucket, which would allow you to capture any data you want to, though I would caution that care should be taken with any PII for players (like email addresses). We'll also be providing bulk actions on Segments in PlayStream soon, which will allow you to run a job to collect information on sets of users (and a Segment could be just "all users").
