I was curious with using Scheduled Overrides if I set the Target Standby to 0, will that enforce not having any Standby server being active during X amount of time? If not, is there a way to automate a schedule to ensure a timeframe to force a server to not have any standby servers active?

According to this document: Scheduled Standby - PlayFab | Microsoft Docs, you can specify the minimum number of target standby, and using the Scheduled Standby, standby pools can auto scale and adjust the target standby value used by the platform at a specific date and time. So yes, the Scheduled Standby can adjust the target standby to 0, as long as your minimum target standby is set to 0.
