Unable to build the necessary environment for playfab cloudscript using azure functions.

PlayFabAllSDK is incompatible with my project while

no stable version of PlayFabCloudScriptPlugin is available.

I had added the extension PlayFab Explorer, is it the new replacement for the other SDK's ?

PlayFabCloudScriptPlugin is not recommended for use. Please use CloudScript using Azure Functions helper class as per the doc: PlayFab CloudScript using Azure Functions Context Models - PlayFab | Microsoft Docs.
