Will you be adding Sign-in with Apple to the Unity plugin?

Hi Andy, the plan for supporting Sign-in With Apple is not mentioned in any public documentation or blog. For now, the best way you can do is to make a feature request here: https://community.playfab.com/spaces/24/index.html to get it promoted, and don't forget to keep an eye on our blog for new updates:)
