How can I get retention data on paying users?

I'm not quite sure how to use the data tool to get a D1/D7 retention on just Paying Users

What data tool are you referring to?

I couldn't figure out how to do it with the data explorer or the trends tool

Trends doesn’t include a tab for paying users retention. If you want to use Data Explorer to analysis the paying user retention, you can use Kusto Query Language (KQL) to design your own analysis algorithm. You can refer to Getting started with Data Explorer advanced mode - PlayFab | Microsoft Learn.
